I love this recipe as its nutritious, quick and easy and full of flavour. My Husband and I share an avocado and often mash up some of the flesh for our eight month old son too- so we all get to enjoy it.
2 fresh eggs
Salt and pepper to taste
Tabasco or cayenne pepper (optional)
Preheat the oven to 190 degrees then slice the avocado in half and remove the pip.
Scoop out two tablespoons of the flesh or just enough to make a well for the cracked egg to sit in.
Place the avocado halves on a small baking tray (be careful not to wobble them or the egg will spill out), then slowly crack an egg into each half.
Bake in the oven for 15 to 20 minutes until the egg white has set.
You can season with chives, salt and pepper or for a touch of heat, I used cayenne pepper – delicious. I served mine with crispy bacon, a slice of toast (spelt bread), and the avocado flesh I scraped out. YUM!
