Healthy Broccoli Bites

I love food.  Simple.  So I try to broaden my little ones palette and knowledge of food too.  Whereas my son, Frankie loves fruit he’s not so keen on vegetables so I try to ‘spruce them up’ to make them more exciting for him.  He does love broccoli though so I took a recipe for Cheesy Broccoli Bites from Super Healthy Kids and adapted it to include less salt while simplifying the method too.

Makes approx 5-6 larger bites/ 12 small ones

Completion time: 10 minutes from start to finish

Ingredients 

  • 1 bush of broccoli, raw
  • 2 large eggs
  • 1/2 cup of breadcrumbs, I put to good use the top and bottom slices of our bread loaf as no one in the family ever eats these
  • 1/2 cup – parmesan cheese
  • 2 tbsp – olive oil

Method

  • Parboil or steam the broccoli to soften it up 
  • Blend it up in a food processor with the rest of the ingredients until you get a rough, tacky mixture (don’t blend too much or you’ll end up with goop – trust me)!
  • Scoop out small balls of the “dough” (after removing the blade!), drop them into the oiled pan and flatten with a spatula to make a ‘burger shape’
  • Pan fry them on both sides till they they’re golden and crispy on a medium heat.
Serve them plain or with a yoghurt dip.  I’m not sure how appetising they actually look but they taste lovely and are very moreish (that’s the verdict from us both).  I will be trying variants of these too and like the thought of cheddar, onion and ham bites and pea and mint bites for Frankie and a grown up version for me of blue cheese and pancetta.  Yum!
