- Parboil or steam the broccoli to soften it up
- Blend it up in a food processor with the rest of the ingredients until you get a rough, tacky mixture (don’t blend too much or you’ll end up with goop – trust me)!
- Scoop out small balls of the “dough” (after removing the blade!), drop them into the oiled pan and flatten with a spatula to make a ‘burger shape’
- Pan fry them on both sides till they they’re golden and crispy on a medium heat.
Serve them plain or with a yoghurt dip. I’m not sure how appetising they actually look but they taste lovely and are very moreish (that’s the verdict from us both). I will be trying variants of these too and like the thought of cheddar, onion and ham bites and pea and mint bites for Frankie and a grown up version for me of blue cheese and pancetta. Yum!
