No-bake Peanut Butter and Chocolate Granola Bars

I don’t know about you but I’m constantly looking for new meal and snack ideas for my child and, as he approaches the fussy eater stage of a typical 22 month old, finding something he’ll enjoy and finish is more important than ever.

Add to that the value of keeping it as healthy as possible and doing it in very little time (I don’t have time to bake all day I’m afraid), then the pressure is on!
Enter the No-bake Peanut Butter and Chocolate Granola Bars.
My hubby isn’t much of a fan of peanut butter fan but even he enjoyed them, my son loves eating them as much as making them and they went down a storm at our recent social gathering with friends.
Served on a yummy platter for friends
Most of the ingredients you’re likely to already have in your cupboards which is an added bonus and money-saver.

Ingredients (approx 12-16 bars)

¼ cup butter
¼ cup honey
¼ cup brown sugar
¼ cup smooth peanut butter
½ tsp vanilla
2 cups porridge oats
1 cup Rice Krispies
Smattering of chocolate chips or like me – I bashed up my favourite chocolate (Green & Blacks), which is terribly therapeutic in itself 🙂

Method (approx 15 mins start to finish)

  1. Use grease-proof paper to line a rectangle baking dish
  2. In a very large saucepan, add the butter, honey, brown sugar and peanut butter and melt together over a low-medium heat
  3. Stir occasionally with a large spoon until it begins to gently bubble
  4. Once bubbling, cook for 1 minute but keep stirring it so it doesn’t stick and stays runny
  5. Remove from heat, wait for the bubbling to stop and stir in the vanilla followed by the oats and Rice Krispies.  
  6. Stir until well until the oats and Krispies are fully coated then pour into the baking dish on top of the paper (a non stick dish works well on its own too)
  7. Press the mixture evenly into the dish so it;s even and tuck in the edges to make it as square and even as possible

8. Sprinkle on your chocolate chips / bashings over the top and gently press into the mix with your hands so they are slightly embedded

9.  Allow to cool, I found they set better in the fridge, and then cut into bars. 
That’s it!
So easy, quick and delicious.
