Healthy, Easy Egg Muffins

These delicious egg ‘muffins’ are known affectionately as ‘eggy things’  in our household and we all love them.  You can choose what to put in them making them ideal anytime of day, and they’re delicious hot or cold so are great for lunch boxes too.

They’re very easy to make and take 20-25 minutes to cook so you can do other bits n bobs while they rise to deliciousness.

Ingredients (for 8 eggy things)

  • Half Chorizo sausage – sliced thinly
  • 2 spring onions – sliced
  • 7 large eggs
  • 50ml skimmed milk
  • Salt and pepper to season to taste
  • Small bunch of fresh parsley – finely chopped
  • Your cheese of choice (we like cheddar for this one) – thinly sliced

Tools:

  • Greaseproof paper
  • Muffin tray
  • Whisk
  • Measuring jug

Method

  • Preheat the oven to 200°C/180°C Fan/Gas 5. Prepare your ingredients as above.  I like to use a vegetable peeler to grate my cheese which gives you thin flakes.  There is no pre-cooking prep for this one, as it cooks together in the tray
  • Whisk the eggs and skimmed milk together and season to taste (my son loves this bit)…

  • Add your ingredients to the mix

  • Line a muffin tin with greaseproof paper, cut to size or you can use paper cases
  • Spoon the mixture evenly between the cases
  • Add your cheese flakes on top then bake in the oven for 20-25 minutes, or until slightly risen and golden.

Leave to cool slightly for a few minutes before removing from the cases et voila!
