FAMILY RECIPE: BUTTERNUT SQUASH SOUP

Soup isn’t just for winter! One of my favourite lunches my mum taught me to make is her butternut squash soup. It’s like a healthy version of comfort food and is so easy to make. Here’s how..

Serves 4

You will need- (besides the hungry family..)

1 vegetable stock cube

2 Carrots

2-3 sticks of celery

1 red onion

2 butternut squash

2 cloves of garlic

Salt and pepper

Begin by chopping up the vegetables and the butternut squash, ensure you get all the seeds from the squash or you’ll be in for a crunchy soup!

Place all the prepared veg, stock and crushed cloves of garlic for added flavour into a pan. Bring to boil and then leave to simmer on a low heat for 25-30 mins.

Once cooked through use an electric whisk to blend the ingredients.  Add salt and pepper.
